Rolled Oats vs. Quick Oats vs. Steel-Cut Oats
Rolled oats are usually the best fit for classic overnight oats because they soften during soaking while keeping enough structure for a satisfying bite. Quick oats soften faster; steel-cut oats stay much chewier.
Rolled oats
Rolled oats are oat groats that have been steamed and flattened. Their shape gives liquid plenty of surface area to work with, making them ideal for an overnight soak.
Quick oats
Quick oats are rolled thinner and/or cut smaller. They hydrate faster and can create a softer, smoother result.
Steel-cut oats
Steel-cut oats are chopped pieces of oat groats rather than flattened flakes. They have a firmer texture and generally require a different preparation approach if you want them tender.
Instant oats
Instant oats are processed for very quick preparation and may become quite soft when soaked for many hours. Flavored instant oatmeal can also include sweeteners and other ingredients, so check the label.
